The Tale of Martin, Lesley & Red Rock
At the age of 17, Lesley had her first job as a bartender & server in a small country pub/restaurant in the Midlands of England. After working in hospitality, Lesley moved her career to Office Management.
In late 1999, Lesley went to the Cayman Islands where she re-entered the hospitality field working at Café Med & Bacchus Wine Bar.
In August 2000, Lesley & Martin met........
Trained at a Small Private Hotel in Germany, Martin brought extensive knowledge to the basics and fine details of cooking with the passion for consitancy and perfection.
After gaining experience in several places in Europe, Munich (Germany), Fuerteventura (Spain) and Reith/Seefeld (Austria), Martin got the opportunity to move to Bermuda and found his love for Caribbean-international food influenced from many different cultures such as Portugal, Jamaica and India.
Martin started as Head Chef in Bermuda for Port O' Call Restaurant, a well reviewed restaurant located at Front Street, Hamilton. Once finding he preferred working with fresh seafoods in smaller Restaurants, he stood up the great challenges and opportunities and moved to the Cayman Islands in early 2000 as Executive Chef for the very popular places Lantana's at Caribbean Club, and the Lobster Pot.
In spring 2007 Martin & Lesley got married in Grand Cayman.
They moved to the British Virgin Islands/Virgin Gorda, where they worked together for the first time, running a small restaurant.
Moving to the "Big Island", Tortola, in October 2008, Martin & Lesley took over a Restaurant in East End.
"Finding a name for our first owned project became a little challenge. Looking out to the open waters of Fat Hogs Bay from the restaurant, you can see the navigation lights for boats on a small reef called RED ROCK, this is how we came to name our restaurant."
